Darunter verbirgt sich eine sahnige Vanille-Creme.<\/p>\n\n\n\n<h3 id=\"zubereitung\" class=\"wp-block-heading\"><strong>Zubereitung:<\/strong><\/h3>\n\n\n\n<p>Sahne, Milch und Eigelb verquirlen und mit den restlichen Zutaten mischen (niemals den Zucker auf das unverquirlte Eigelb geben, denn das gibt fiese kleine Zucker-Eigelb-Kr\u00fcmelchen die sich nicht mehr vollst\u00e4ndig aufl\u00f6sen). Nun alles mind. 30 Minuten ziehen lassen (geht auch \u00fcber Nacht).<\/p>\n\n\n\n<p>In feuerfeste F\u00f6rmchen f\u00fcllen (in 4 gr\u00f6\u00dfere F\u00f6rmchen f\u00fcr 4 gierige Cr\u00e8me-brul\u00e9e-Fans, oder in 6 kleinere) und in die Fettpfanne des auf 150\u00b0C vorgeheizten Backofens auf die mittlere Schiene stellen. Die Fettpfanne bis zum Rand mit kochendem Wasser f\u00fcllen und die Cr\u00e8me 55 Minuten stocken lassen. Die Oberseite wird etwas blasig und braun, macht aber nichts.<\/p>\n\n\n\n<p>Die F\u00f6rmchen ausk\u00fchlen lassen (die Masse ist direkt aus dem Ofen noch wabbelig, aber das \u00e4ndert sich, wenn sie kalt ist) und im K\u00fchlschrank mind. 2 Stunden durchk\u00fchlen (geht ebenfalls \u00fcber Nacht). Ich stelle die Cr\u00e8me vor dem brulieren (Karamellisieren) noch einmal kurz ins Eisfach, damit sie wirklich sch\u00f6n kalt ist.<\/p>\n\n\n\n<p>Nun kommt noch die knackige Karamellschicht drauf. Ich verteile dazu auf jedem F\u00f6rmchen ca. 1 EL feinen, wei\u00dfen Zucker (brauner Zucker verbrennt zu schnell) und \u00dcberflamme es langsam und gleichm\u00e4\u00dfig mit einem Flammbierbrenner (Candyman), bis sich eine glatte Schicht gebildet hat. Es soll auch unter dem Backofengrill gehen, aber dar\u00fcber habe ich keine Erfahrungswerte.<\/p>\n\n\n\n<h3 id=\"zutaten-fuer-4-portionen\" class=\"wp-block-heading\"><strong>Zutaten f\u00fcr 4 Portionen:<\/strong><\/h3>\n\n\n\n<figure class=\"wp-block-table\"><table><tbody><tr><td>400 ml<\/td><td>Sahne mit hohem Fettgehalt<\/td><\/tr><tr><td>140 ml<\/td><td>Vollmilch<\/td><\/tr><tr><td>85 g<\/td><td>Zucker, braun oder wei\u00df<\/td><\/tr><tr><td>5<\/td><td>Eigelb<\/td><\/tr><tr><td>1<\/td><td>Vanilleschoten, das Mark, evt. auch etwas fl\u00fcssige Vanilleessenz<\/td><\/tr><tr><td><\/td><td>Zitronenabrieb<\/td><\/tr><tr><td><\/td><td>Zucker, fein, wei\u00df, zum Karamellisieren<\/td><\/tr><\/tbody><\/table><\/figure>\n","protected":false},"excerpt":{"rendered":"Cr\u00e8me br\u00fbl\u00e9e Eine k\u00f6stliche Karamellkruste macht die Cr\u00e8me br\u00fbl\u00e9e zu einem ganz besonderen Dessert.
